With all this wireless technology why aren't all systems on air craft ie. rudder, ailerons etc. connected wirelessly so just in case of fire and loss of other control systems this back up could save the day.

If I'm not mistaken, the most common cause of control surface failure is power or hydraulic pressure loss. The pilot's controls are redundantly linked to these surfaces, but if there is no power or hydraulic pressure to move them, it doesn't matter how reliable the controls are. Good ole ropes and pulleys would make a better backup than all the technology in the world.
